Recipe Inspiration: Chicken Kalio

Our very first recipe to inspire your Big Curry Night In comes from Grandma Nomi in Zanzibar, Tanzania and is a delicious Chicken Kalio.


Traditionally Chicken Kalio's are enjoyed by the Bohra community as part of a thaal. This is when families come together to enjoy a meal around a circular table laden with dishes.

The recipe is super easy to make and goes really well with rice and roti, depending on your preference.


Here's what you'll need:

18 Chicken Legs 3 Cups Yogurt

2 tbsp. mixed paste of green chillies, garlic & ginger) 2 1/2 Cups Tomato Puree

6-8 Onions 6 Green Chillies

2 tspn Haldi (Tumeric) 3 Sticks Cinnamon Few Cloves and Whole Black Pepper 1 tblsp White Zeera (cumin)

Salt to taste


Get cooking:

  1. Brown the sliced onions and crush.

  2. Mix all the ingredients together with the onions and marinate the chicken in it for 2 hours.

  3. Heat a few spoons of oil or ghee and add to the chicken.

  4. Cook on a slow fire or a medium oven for 1 ½ to 2 hours.

  5. Garnish with hard boiled eggs before serving.

  6. Enjoy!
