Chicken Makhani is a dish that delivers many complex flavours with its rich, indulgent ingredients. It's the perfect thing to try when you're in the mood for a treat!
500 g Chicken Thighs ( skinless & boneless) 100 g Greek Yoghurt
4 Large Tomatoes (chopped) 2 tsp Deggi Mirch or Hot Paprika 5 tsp Kasuri Methi ( Fenugreek Powder) 2 Lemons ( Juiced) 2 Green Cardamom Pods 2 Cloves 1/2 tsp Garam Masala 2 Bird's-eye Green Chillies 1 tsp Ginger & Garlic Paste 2 tbsp Butter 100 ml Double Cream 1/2 tbsp Honey Salt to taste
3 tbsp of Vegetable Oil
Method Marinade the Chicken Thighs with 2 tsp of Deggi Mirchi, the Lemon Juice and Salt in a bowl for 30 minutes. Then add the Greek Yoghurt, 3 tsp of Kasuri Methi, 1/2 tsp of Garam Masala and 3 tbsp of Vegetable Oil and place in the fridge for three hours.
Whilst the Chicken is marinating add 1 tsp of Ginger & Garlic paste to a pan with the Cloves, Green Cardamom, Chopped Tomatoes, Green Chilli, 1/2 tbsp Kasuri Methi and 2 tbsp of butter and bring to the boil. Reduce the heat and simmer for a further 20-30 minutes before removing from the hob and blending into a smooth sauce. To finish the curry, cook the Chicken on a barbecue, griddle pan or in a hot oven until cooked. Stir the Chicken in to the hot sauce and serve.
